Garlic is a food. As the health benefits from eating garlic can include the favourable moderation of cholesterol levels, blood pressure readings and thinning of the blood, we recommend if you eat garlic frequently that you have regular medical check-ups to ascertain these readings.
Garlic contains specialised sulphur compounds active against certain bacteria (compare sulpha drugs). These are the major components of garlic and make up to 2.0% or more of garlic's dry weight. Alliin is the most important, but is inactive in whole garlic.
Garlic has to be crushed, cut or damaged for Alliin to be converted into the active component Allicin through ezymatic activity. Allicin's metabolic products and many associated sulpur-based molecules are what give garlic is renowned natural health properties.
To get the best benefit from garlic, it is best to crush garlic up to 15 mins before eating it to give the enzymes time to work.
